Challenge #4

My forth challenge came via e-mail, and it was for Kosher spring rolls. Concidering these include pork AND shrimp, we need a few products. First off is Dixie Diner Ham (Not!), a vegan alternative to ham. Secondly we need some Vegan shrimp. Now, having both of these, we can do it!

Kosher Fresh Spring Rolls

3/4 pds. Ham (not!)
Water
16 vegan shrimp
2 oz. rice vermicelli
2 carrots, shredded
8 large rice-paper rounds
Butter lettuce leaves cut in half
Bean sprouts
Mint leaves
Chives

Cook Ham (Not!) according to directions on package.

Chill, then roll into thin snake strips.

Cook the vegan shrimp.

Boil noodles and rince under COLD water before draining.

Shred the carrots.

Fill a shallow bowl with water and set near all the ingredients, and place a dry towel over the work space.

Dip the rice paper in the water and place it on the towel.

Lay a half a leaf of lettuce on the bottom third to half of the round.

On the leaf place some noodles, carrot shavings, a faux pork roll, bean sprouts, and mint leaves.

Roll rice paper and the leaves up halfway, and fold the ends over the sides.

place the vegan shripm aling the crease, and slip the chivesunder the shrimp on one end.

Continue rolling until sealed, and then sdet on a plate before covering with a slightly damp cloth.

Serve with peanut sauce, and makes 8 rolls.

    I’m looking for kosher rice paper and kosher rice noodles for spring rolls. would you know of any with a valid hescher?

    Outside of Industrial/professional distribuitors, sadly, no on the rice noodles. It seems most Kosher companies are focused on using rice noodles for JUST side dishes or in entrees, thus making it difficult for the home cook to make dishes. BUT I’m not only working on making rice noodles at home in a future article, I’ve found out that rice paper/noodles are Kosher without supervision as long as they are made with whole ingredients (I.E. no chemicals or trayfe additives.)

    As for rice paper, there are several rice paper distribuitors that are Kosher. I like KopyKake’s rice papers, myself. Great for making spring rolls. Now, I personally don’t muxch care for thwe vegan ham & shrimp, myself, but I do think a vegan version is just as good. I just slip in some sliced avocado, or mabye chicken breast slices if I HAVE to have protien. The idea on this challebnge was to Kosher-fy the ORIGINAL Spring Roll recipe, so… Yeah. ^^
